Easy & Healthy Cinnamon Apple Oatmeal Bake

Perfect on a cool crisp morning, or any time you’re in the mood for a scrumptious hearty breakfast, this delightfully delicious and easy-to-make oatmeal bake is just the ticket for getting your family out of their cozy beds for a healthy, heartwarming breakfast.

Plus, this easy-to-make baked oatmeal is not only packed with creamy, cinnamon-apple flavor, but also lots of delicious nutrition!

Whether it’s a special occasion or not, you’ll feel like it is with each tasty bite. That’s why this is one of our favorite breakfast recipes to serve when we have guests. Simply double it for an easy, yet impressively delicious breakfast-bake that everyone will enjoy!

Cinnamon Apple Oatmeal Bake (GF, DF option)

For the Oatmeal Bake
1 can pure coconut milk (or 1 2/3 cups whole milk)
1/4 cup pure maple syrup
1 large egg
2 tsp vanilla extract
1/2 tsp ground cinnamon
1/8 tsp sea salt
1 1/2 cup rolled oats (if gluten-free, be sure to use certified GF oats)
1 large apple, thin-sliced
Optional: Walnut pieces for sprinkling

Cinnamon Swirl Topping
1 Tbsp butter (or coconut oil), melted
2 Tbsp pure honey
2 tsp ground cinnamon
1/4 tsp vanilla extract

Instructions:
1. Preheat oven to 375°F. Generously grease an 8×8-inch baking dish with butter or coconut oil; set aside. 

2. In a small bowl, prepare the Cinnamon Swirl Topping by whisking together the topping ingredients until well blended. Set aside.

3. In a large bowl, add all of the Oatmeal Bake ingredients, except the oats and apple slices. Whisk together, until well combined. Then, using a rubber spatula, stir in the oats. Transfer mixture to the prepared baking dish, making sure to even out the top. 4. Arrange the apple slices across top of the oat mixture and sprinkle with walnut pieces, if desired. Then, drizzle with the Cinnamon Swirl Topping.

5. Bake for 30-35 minutes until golden brown and center is set. Remove the oatmeal bake from the oven and allow it to cool on stovetop for 3-5 minutes. Sserve with a splash of your favorite milk. So yummy!

Recipe Note: If doubling the recipe, use a 9×13-inch baking dish and extend bake time to 35-40 minutes.
