Sloppy Joe Stuffed Peppers

Don’t get me wrong, there’s nothing wrong with a classic stuffed pepper, but sometimes it’s fun to change things up a bit! You could fill a pepper with tons of options, but sloppy joe meat is definitely a must-try. 

This was so simple and easy and is a great low-carb option if that matters to you. The kids love it as much as regular sloppy joe and you can feel so good about serving it to them. Serve alongside a simple green salad or some sweet potato fries.

We are in the perfect season to make use of the beautiful stuffed peppers coming out of everyone’s gardens.  If you have a local farmers market or your own garden, go pick out the best green peppers and give this recipe a try! 

 Sloppy Joe Stuffed Peppers

Serves 6

Ingredients

4 large green peppers

2 lbs ground beef (or ground turkey)

½ cup diced white onion

2 garlic cloves, minced

1 small can tomato paste

2 Tbsp. yellow mustard

1 Tbsp. Worcestershire sauce

1/8 cup brown sugar

Pepper to taste

2 cups sharp cheddar cheese, shredded

 Directions

1.     Preheat oven to 375 degrees and line a sheet pan with foil

2.     Half each of the green peppers, lengthwise, and remove seeds.

3.     Heat a large skillet over medium heat.  Brown ground beef until cooked through and crumbled.

4.     Add onions, garlic, tomato paste, mustard, brown sugar, Worcestershire, and pepper. Heat through and combine flavors.

5.     Combine 1 cup of the shredded cheddar into the sloppy joe meat and simmer.  If meat seems dry, add a few tablespoons of water.

6.     In a microwave safe bowl, microwave halved peppers for 4-5 minutes (steaming them). 

7.     Remove from microwave, and stuff each pepper full of sloppy joe meat, place on prepared baking sheet.  Sprinkle the remaining 1 cup of shredded cheese over the peppers.

8.     Bake 25-30 minutes or until peppers are hot and bubbly.  Enjoy!
