Okay, so by now you most likely have read one of my past posts on Craftsy. I have to say, as I continue to take their classes and share them with you, I am more and more impressed.  I didn’t expect to find such an extraordinary resource. But it is really an invaluable wealth of information and I am learning so much along the way!

I really cannot wait to tell you about the latest class I took, Perfecting the Pie Crust. I LOVE pie, but I have to admit the very best part of the pie to me...is the crust.  I need a really good crust to have a really good piece of pie. I know...it sounds so simple. And really, why would you need to take a whole class on making a pie crust?! But I have to tell you after taking the class and making the crust myself, I am not exaggerating when I say in all of it's flakiness and rich flavor, it was the best pie crust I have ever had. Oh my word!

So my favorite thing I learned from this class is just really how simple and quick it is to make an amazing pie crust. The instructor was so easy to understand and just walked step-by-step through the making of the crust - ingredients, tools and what she calls a 1-2-3 ratio that will help you remember the ingredient ratios from now on! The icing on the cake for me, or the filling in the pie, :) is the extra class section at the end called The Ultimate Apple Pie. I was so enticed by her amazing pie that I immediately made the crust and the pie. It was SO quick and simple and it was delicious!! Two pieces later my husband was complaining that maybe he had eaten too much! Ha!

I feel so much more confident in my pie making skills and I can't wait to share The Ultimate Apple Pie with friends and family. Here is the recipe for the pie crust (although the technique learned in the class is what really puts the finesse on the crust!).

Like I have said over and over again, one of the best things about taking the class online, besides the valuable information, was the ability to start the class and pause the class whenever I needed to. When the kids were in bed, or when I had a few minutes during the day to spare, I would sit down and watch a bit of the course in the comfort of my own home. It was so convenient!
